OMG so delish "mint mud-pie chocolate cookies"

I like to cook and I love to bake, though I don't do it very often because as I get older it seems every cookie sticks to my bum like cookie dough. ;P But today I wanted to bake and I "invented" these amazingly gooey delicious cookies. They pass the day old cookie test too.

So here's how to make them:

INGREDIENTS:

1C butter, softened

1C white sugar

1C packed brown sugar

2 eggs

1T vanilla extract

2C flour (you made need 1/2 C more depending on climate - I live in the desert and too much flour makes my cookies tasteless)

1/2C Choclate pudding mix, instant

1t baking soda dissolved in 2t hot water

1/2t salt

1C your favorite chocolate chips (I use Ghiardelli semi-sweet)

1/2 C Andes Mint chocolates, chopped fine (you can buy them this way)

 

Directions:

1. Preheat oven to 350 - 175 Celcius

2. cream together butter and both sugars. Beat until smooth. Lightly beat the eggs and mix into butter sugar mixture. Mix in the Vanilla. Next add the pudding and beat until smooth. Add in the baking soda/water mixture and the salt. Mix in the flour and lastly add the chocolate and mint chips.

3. Chill. (The dough, not you. Or you can as well if you like.)

4. Scoop out with a round tablespoon (about the size of a golf ball) and bake approximately 10 minutes.

5. Let cool and enjoy!

 

These have a delicious crisp outside and get gooey as you get toward the middle.
